What's the story behind burnt ends?

Burnt ends are considered a Kansas City barbecue delicacy. When customers waited in line for their barbecue orders at Kansas City area restaurants, they watched as countermen cutting barbecue for orders would trim the burned outer edges from the pork and push them to the side. Hungry customers were allowed to sample these pork pieces as they waited and so began a legendary craving for more of these burnt ends.

What are burnt ends?

Traditional pork burnt ends are smoked, moist cuts of pork. Smoky, tender and melt-in-your-mouth delicious, pork burnt ends are perfect when served all by themselves or in a barbecue sandwich with traditional white bread or artisan buns.
