Every year, roughly 200 million liters of fresh Irish milk are required to produce the creamiest of cream used in the production of Baileys. That’s enough to make about 3.3 billion Baileys milkshakes, give or take.

Farming Partners

Since 1865, the Hayden family have been successfully running their family farm, combining farming rituals with a strong focus on the importance of biodiversity. The now fourth generation of owners, Joe, and Michael Hayden, strive to preserve the natural heritage of their dairy farm. It’s their way of life.

This milk is mostly supplied from small, family-owned farms. Some of these thousands of acres are dotted with protected bog, natural woodland, wild meadows and native hedgerows. There are sanctuaries for small animals, birds, bees and butterflies.

Company History

The founders wanted to take two simple treasures that their country was known for, delicious dairy cream and world-renowned Irish whiskey, and combine them. It took two years of trial and error but by 1974, they had added the finest spirits, rich chocolate and vanilla flavors (with some other flavors and ingredients) along with a little magic, to create the Baileys recipe we now know and love.

Company Sustainability Efforts

Since Baileys launched in 1974, they've paid a premium for top quality milk from their farmer-owned co-operative dairy supplier. Through them, they ensure the high standards of animal welfare and traceability in the milk that transforms into Baileys Irish Cream Liqueur. In recent years, they've reduced the amount of water used in the factories and switched to 100% renewable electricity to power them. They pay their employees a living wage and ensure they have access to leading benefits, like six months paid family leave for parents.

In 2020, Baileys ran a lifecycle analysis from grass to glass, which measured their impact on the planet. They looked at everything from the impact of their dairy farming, through to their production process, water usage, packaging, logistics and waste disposal. Their high environmental standards and plans for improvement is what led them to a score of 21 points in their B Corp environment assessment. Since 2008, all Baileys operations have run on 100% renewable electricity. At the production sites where they make and bottle the delicious Baileys, they've already reduced water consumption by 29%. At Baileys, they create zero waste to landfill in their direct operations—reducing, reusing and recycling everything on site since 2014.

Baileys Chocolate Mocha Martini Recipe

Ingredients:

• 1.5 oz. Baileys Chocolate
• 0.75 oz. Ketel One Vodka
• 1 oz. Fresh Espresso
• 0.25 oz. Simple Syrup

Instructions:

1. 1. Add all ingredients to cocktail tin.
2. 2. Shake and fine strain into coupe/martini glass.
3. 3. Garnish with vanilla cold foam and/or three espresso beans.
