What Does Angus Beef Mean?
"Angus" refers to beef from the Aberdeen Angus breed of cow. Originally from Scotland, it's a sturdy breed that became popular due to its ability to produce meat with higher marbling content.
What Does USDA Choice Mean?
The grading system used by the United States Department of Agriculture determines the quality of beef based upon a complicated inspection system that measures the amount of marbling in the ribeye muscle portion, then combines that marbling with the maturity of the beef to determine the USDA grade. The more marbling and the younger the beef, the higher the grade and quality. The fat marbling is what determines tenderness, juiciness and flavor, while the age of the beef determines texture as well as flavor.
