Josh Cellars Chardonnay has aromas of tropical fruits and citrus married with notes of oak. A delightful harmony of fresh yellow and white stone fruits lingers on the palate and finishes with fresh and clean acidity. The grapes for this Chardonnay were picked at optimal ripeness in the cool of the morning. After allowing to cold settle for 24 hours, the juice was fermented in oak and kept cold at 55°F to retain its lively aromatics. Once fermentation was complete, the wine was transferred to 30% new French oak and stirred on its lees, then settled and kept cold in preparation for bottling.
