Chardonnay grapes were picked early each morning to preserve sugar and acidity levels in the fruit, then whole cluster pressed cold directly to barrel for a slow, native fermentation. Barrels were stirred to suspend the lees during malolactic fermentation and racked prior to bottling. The wine was aged 10 months in 25% new and 75% two- to three-year-old French oak barrels before bottling.
