Banana Bread with Honey Vanilla Glaze Recipe

Ingredients:

  • 1 ¼ cups all-purpose unbleached flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¾ cups sugar
  • 1 tsp salt
  • 1 cup pecans, chopped and toasted, divided
  • 1 cup unsweetened shredded coconut
  • ½ tsp nutmeg
  • ½ tsp cinnamon
  • 3 bananas, (about 1 cup), mashed
  • 2 eggs
  • 1 cup Greek Gods Honey Vanilla Yogurt
  • 2 tbsp unsalted butter, melted
  • 1 tsp vanilla extract

Steps:

  1. Pre-heat the oven to 350°F. Grease a 9x5-inch loaf pan with vegetable oil spray.
  2. In a large-sized bowl combine the flour, baking powder & soda, sugar, salt, ¾ cup toasted pecans and coconut, nutmeg & cinnamon.
  3. In a medium-sized bowl mash the bananas with a fork, until smooth. Whisk in the eggs, Greek Gods Honey Vanilla Yogurt, melted butter and vanilla extract.
  4. Using a rubber spatula, fold the mashed bananas into the bowl of dry ingredients. Pour the batter into the greased loaf pan. Place the pan on a baking sheet, and bake in the oven for about 50 minutes until an inserted wooden toothpick comes out clean.
  5. Allow to cool on a rack at least 15 minutes before unmolding. Prepare the Honey Vanilla Glaze.

Ingredients for Honey Vanilla Glaze:

  • ½ cup, confectioner’s sugar
  • 1 tablespoon, Greek Gods Honey Vanilla Yogurt
  • ¼ cup, pecans, chopped and toasted

Steps:

  1. In a small bowl whisk together, the confectioner’s sugar and Greek Gods Honey Vanilla Yogurt.
  2. Pour over the unmolded Banana Bread, allowing the glaze to drip down the sides. Sprinkle on the remaining toasted pecans. Slice & enjoy!
