This stretched curd cheese is the Hispanic version of string cheese, as it’s kneaded, it’s then wound into balls. Oaxaca cheese balls can be peeled and unwound as a snack. Its mild flavor and white color makes it delicious for cooking and for melting in quesadillas. Pull it apart into thin strings before filling tortillas or melting it into dishes.
